Pipechimp takes custom fields from the people custom field tab from top to bottom.
You can arrange the field order by dragging and dropping the fields you want to be synchronized to the top of the list in Pipedrive.
If Pipechimp have already synchronized the fields to Mailchimp you can delete the unnecessary fields from MailChimp (after rearranging them in Pipedrive first)
On the next run, Pipechimp will synchronize the fields you desire.

After Pipechimp has synced the fields to MailChimp you can rearrange them to the order you wish without affecting the sync.
